Recipe (Makes 2)
4 oz White Rum
6 oz Pineapple Juice
3 oz Coconut Cream (such as Coco Lopez)
16 oz Ice
Combine all ingredients in a blender and blend until smooth and frosty. Pour into two glasses and garnish with a pineapple slice.
I love Piña Coladas. They're probably one of the most famous blended drinks (thanks Jimmy Buffet), but also one of the more difficult to perfect.
At its core, a piña colada is simple to make with just 4 ingredients: rum, pineapple juice, coconut cream, and ice. It's very important to use good ingredients, a good white rum such as El Dorado 3 yr or something else high quality will go a long way to making your drink delicious. Coconut cream, the thicker and fattier version of coconut milk, is what gives your drink a rich texture and flavor. My personal favorite is Coco Lopez. A word of caution: if you buy a can of coconut cream in your grocery store's international aisle most of those are unsweetened. If you're only able to find an unsweetened version use 2 oz of coconut cream and 2 oz of 1:1 Simple Syrup for each 2 serving batch.
