2 oz White Rum (such as El Dorado 3 Year)
.75 oz Lime Juice
.5 oz 2:1 Rich Simple Syrup
Combine all ingredients in a shaker filled with ice. Shake for 15-25 seconds, or until chilled. Strain into a chilled coupe and serve.
The Daiquiri is one of those drinks that has definitely changed over the past few decades. I'm sure that most people associate it with the very sweet blended drink that's common at beach resorts or in New Orleans. Now, there's nothing wrong with drinks like that, and they're quite nice on a hot summer day. The original recipe, created well before the invention of the blender, is a simple and amazing drink that is one of my absolute favorites. In its most simple form, a daiquiri is rum, lime and sugar. This gives you a lot of room for experimentation and to create a lot of variety. The rum you choose for the drink has a huge impact on the final flavor of the drink, and rum is a spirit with a lot of variety.
This recipe is pretty straight forward and uses a white rum that lets the citrus flavor shine through. It uses rich (2:1) simple syrup that helps the mouthfeel of the drink. You're able to add the same amount of sugar with less dilution.
